It’s the season for baking!! i was wanting something soft and cake-like + apples and cinnamon + crunchy oats and pecans on top. so i made up this recipe – it’s the perfect harmony of an apple fritter meets spongey vanilla spiced cake. pairs perfectly with ice cream for a delish dessert, or warmed up with a cup of coffee for a cozy breakfast.

Gluten Free Apple Fritter Cake
Yield: 1 large loaf
Prep time: Approx. 15 minutes
Total Time: 60 minutes

List of Ingredients
– 1.5 cups of pink lady apples, chopped
– 8 tbsp butter, softened
– 1/2 cup white sugar
– 1/2 cup brown sugar
– 2 eggs
– 1 tsp vanilla extract
– 1 tsp baking powder
– 1 tbsp ground cinnamon
– 1 tsp ground clove
– 1 tsp ground nutmeg
– 3 tbsp of honey
– 1 cup of gluten free flour
– 1 cup of almond flour
– 1/2 cup oats
– handful of pecans
– pinch of sea salt

Directions
- Preheat the oven to 325.
- In a medium sized bowl, whisk the butter and sugar together until fully incorporated. then add in the eggs and vanilla. whisk for 30 seconds and set aside.
- In a separate bowl, mix the baking powder, gluten free flour, almond flour, cinnamon, clove, nutmeg and sea salt together. then add the dry ingredients into the wet and mix until fully incorporated.
- Next, fold in the chopped apples *cue david and moira’s infamous “fold it in” scene – just fold it in!*
- Butter an 8 in round cake pan or a glass dish and pour in the batter. sprinkle the oats on top, then the pecans, and drizzle honey all over.
- Bake for 35-40 minutes and let rest for a few before digging in (by this point your house will smell absolutely divine and it’ll be hard to wait) ENJOY!
