Olive Pecan Cheese Ball
Yield: 1 cheese ball
Prep time: Approx. 30 minutes

List of Ingredients
- 1 8 oz block of cream cheese
- ½ cup Spanish olives with pimientos
- 1 tablespoon of mayonnaise
- ½ tsp of onion powder
- ½ cup of Rancho Pecana chopped pecans
- ¼ cup of fresh chives

Directions
- In a mixing bowl, beat cream cheese until smooth and creamy. Add the mayo and onion powder to the bowl and beat until combined. Fold in the chopped olives.
- In a plastic wrap, place the mixture in your desired shape. Let it chill in the refrigerator for at least an hour or until the cream cheese is firm.
- Meanwhile, place the chopped pecans in a single layer on parchment paper. Bake the pecans for 350 degrees for 8 minutes and constantly turn them so they won’t burn. Remove the pan from the oven and allow the pecans to cool for 30 minutes.
- When the pecans are cool enough, mix the toasted pecans and chopped chives together in a shallow plate and roll the cream cheese ball until completely coated.
- Keep it chilled until ready to serve.
