Pecan Sour Cream Coffee Cake

List of Ingredients

Cake Batter:

1 Stick butter, room temperature

1 cup white sugar

3 eggs

2 cups all-purpose flour

1 tbsp baking soda

1 tbsp baking powder

1/4 tsp salt

1 cup sour cream

Pecan Crumb Toppings:

3/4 cup light brown sugar

1 tbsp all-purpose flour

1 tsp cinnamon

2 tbsp cold butter, cut into cubes

1 cup Rancho Pecana chopped pecans

Directions

1. Preheat oven to 350°F. Butter a cake pan.

2. In a large bowl, beat the butter until it is smooth. While the mixer is running, slowly add the sugar, mix, and eggs until everything is fluffy. In a medium bowl, mix the flour, baking soda, baking powder, and salt. Afterwards, add the flour mixture to the butter mixture and sour cream. Beat until all ingredients are mixed evenly. 

3. Afterward, spread the batter into the pan. Sprinkle crumbs (instructions below) over the batter. Bake for about 45 minutes and remove from the oven and allow to cool. 

Crumb Topping Directions

  1. In a medium bowl, combine the brown sugar, flour, and cinnamon. Afterwards add the butter, and mix the mixture with fingers to prevent large crumbs. Afterwards add the best topping PECANS!
