List of Ingredients
For the stuffing:
1 cup of dates (10 approx)
1/4 cup milk
2-3 tbsp coconut oil
1 tsp sea salt
2 cups of pecans (I used from @ranchopecana)
For the base:
2 cups of almond flour
1/4 cup natural maple syrup
1/3 cup coconut oil, melted
1 tsp vanilla
1/4 tbsp sea salt
__
Directions
1. Preheat your oven to 350F (180C) and cover a square or rectangular pan with parchment paper
2. First in a large deep dish, mix all the ingredients necessary to make the base until well incorporated.
3. Put the dough on the mold and cover the entire surface very well with the help of a spoon or your hands until it forms a layer of about 2cm and bake for 20 min or until the golden edges are visible
4. While the base is baking, prepare the filling starting by making the date candy – in a food processor (you can use a blender) process all the dates, the almond milk, salt, and coconut oil
5. Then combine the caramel with the chopped / finely chopped pecans
6. Remove the base from the oven and let it cool for 15-20 min then add your filling on top of the base and cover it very well – bake for 25-30 min or until the filling is firm
7. Let cool for about 30 min and cut into medium squares (they come out as 9 bars)
8. Decorate with pecans on top of each bar or with icing sugar!
