
Pecan Coffee Cake

This simple recipe has the perfect swirl of cinnamon and pecans with a combination of coffee flavor. Perfect recipe to pair with a cup of coffee on a cold winter morning.
List of Ingredients
1 package of yellow cake mix
1 package of instant vanilla pudding mix
1 cup of sour cream
4 large eggs
⅓ cup canola oil
2 teaspoons vanilla extract
⅔ cup of Rancho Pecana pecans
⅓ cup sugar
2 teaspoons of ground cinnamon
½ cup of confectioners sugar
2 tablespoons orange juice

Directions
- In a large bowl, mix together the first 6 ingredients for about 4 minutes.
- After ingredients are beaten thoroughly, pour into a baking pan. Over the batter sprinkle pecans, sugar, and cinnamon and swirl through the pecan mixture.
- Bake at 350 degrees for about 30-35 minutes or until the toothpick comes out clean.
- While the coffee cake is baking, combine in a small bowl; confectioners’ sugar and orange juice until smooth. Afterwards drizzle over warm coffee cake.
