What is the difference between Fancy and Choice?

According to the NOM:
Fancy- Nut well developed, undamaged by any reason, with a content of shell and foreign matter not greater than 0.05 %; with an external color of the edible content with a variation of not more than 3.0% and a uniform size with a variation of no more than 10%.
Choice- Walnut well developed, with no major variance at 8.0% damage from any cause, with shell and matter content foreign not greater than 0.15%, with a variation in its color not greater than 25.0% and a variation in its size not greater than 15.0%.
According to USDA:
Fancy-consists of pecan half-kernels which meet the following requirements: (a) For quality:
(1) Well dried;
(2) Fairly well developed;
(3) Fairly uniform in color;
(4) Not darker than “amber” skin color;
(5) Free from damage or serious damage by any cause;
(6) Free from pieces of shell, center wall, and foreign material; and, (7) Comply with tolerances for defects (see §51.1439); and,
(b) For size:
(1) Halves are fairly uniform in size;
(2) Halves conform to size classification or count specified; and, (3) Comply with tolerances for pieces, particles, and dust
Choice- The requirements for this grade are the same as those for fancy Halves except: (a) For quality:
(1) No requirement for uniformity of color; and,
(2) Increased tolerances for defects (see §51.1439); and,
(b) For size:
(1) No requirement for uniformity of size.

Our cutters are tuned to give us a piece size between 3/8" and 1/4" (9.5 mm and 6.3 mm), and over 85% of what the consumer receives is between these limits, and the rest can be be a little bigger or smaller.

Yes we do! Each delivery of articles of food hereafter made by the undersigned is guaranteed as of the date of delivery to be: not adulterated or misbranded within the meaning of the Federal Food, Drug and Cosmetic Act, as amended; not an article which may not under the provisions of Section 404 or 505 of said Act to be introduced into Interstate Commerce; and, not in violation of the provisions of the Food Additives Amendment of 1958.

This guarantee is in like terms applicable to any state law or municipal ordinance in which the definitions of adulteration or misbranded are substantially the same as those in said Federal Act. By the acceptance of this guarantee, you agree to promptly notify the undersigned in writing of any demand, complaint or proceeding for a claimed violation of any of the above-mentioned laws, giving the name and address of the complaining party and the product concerned.
This guarantee is not assignable.  Any guarantee heretofore issued which relates to the subject matter hereof is superseded by this guarantee which continues in full force until revoked by written notice.

How do you storage pecans? / How should I storage pecans?

Store in cool dry hygienic environment away from strong odors.
Shelf life: recommended temperature conditions from 33F to 40F for 1 year or less. 
Optional conditions: < 0F for 2 years or less.
